|Some predictive microbiology software, for example, ComBase, FSSP, and so on are provided on the website. The growth and inactivation curves for target food and microorganism are derived by using these tools.
The objectives of this study were to develop a numerical analysis app for the heat sterilization process of cylindrical foods and to publish this app on a website. By using the app we developed, the internal temperature profiles of the sample were simulated after setting some values: sizes, physical properties, and initial temperature of the sample, the heat transfer coefficient, the ambient fluid temperature of the sample (free-stream temperature), and so on. As one example, the survival curves of Clostridium sporogenes were calculated based on the results of heat transfer analysis and the literature values of the D- and z- values. This app and some other apps will be published on our website.
