概要 In this report, we showed the presence of NO2-Trp in food products. NO2-Trp containing proteins were found in various foods and identified several major proteins like 6-phosphofructokinase contain NO2-Trp residues by LC-MS/MS analysis. We determined that the identified proteins might be key providers of NO2-Trp in foods.
